We discovered this whilst trying to find something non-carby to accompany a chilli con carne.  It’s quick, easy and incredibly tasty.

Ingredients for Mexican Salad

Serves 2

  • Quarter of a red cabbage – shredded
  • half a large carrott – cut into fine batons
  • 1 yellow capsicum pepper – sliced thinly
  • 6 cherry tomatoes – cut in half

Ingredients for Mexican Salad Dressing

  • 3 dessert spoons of mayonnaise
  • 100ml skimmed milk
  • 1 tsp cumin
  • 2 tsp chili powder
  • 1 tsp onion granules
  • 1 tsp garlic granules
  • 1 tsp lime juice
  • 2 tsp dried oregano

Method for Mexican Salad

1. Put the salad ingredients in a bowl and mix.

2. Combine all of the ingredients for the dressing and whisk until it’s smooth

3. Refridgerate dressing for a couple of hours

4. Serve

This indian courgette recipe is both tasty and extremely quick to make. A perfect accompaniment to any other curry dish.

Ingredients for fried indian courgette recipe

  • 3 courgettes (halved lengthwise then diced)
  • 1/2 tsp turmeric powder
  • 1/2 tsp chilli powder
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • Knob of Butter (or ghee)

Preparation:

  1. Mix the courgette pieces with the turmeric and chilli powder in a bowl
  2. Heat the butter or ghee in a frying pan and add the cumin and fennel seeds, fry until the cumin seeds are golden brown
  3. Fry courgette pieces for about 7 minutes or until firm but tender.

Enjoy your fried indian courgettes!

A quick and easy side dish, this spinach curry recipe uses a blended mix of onions to give it a great consistency. Spinace curry recipe is as follows:-

Ingredients for Spinach Curry Recipe

  • 1 bag of fresh spinach
  • 1 medium onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 Thumb of ginger
  • 2 tbsp Oil (or ghee)
  • 1 tsp garam masala
  • 1 tsp of cumin seeds
  • 1 tsp of ground corriander
  • 2 tbsp tomato puree
  • 2 tbsp single creme

Method for Spinach Curry Recipe

  1. Blend onion, garlic and ginger to a paste
  2. Heat oil and fry cumin seeds until golden brown
  3. Add onion paste and fry for around 5 minutes
  4. Add turmeric & spinach and heat for a further 5 minutes stirring regularly
  5. Finally stir in coriander, tomato puree and garam masala and cook on medium for 20 minutes
  6. Add creme and serve

This mushroom bahji recipe is quick easy and low carb (so suitable for atkins). You can put this together and get it to the table in about 15-20 minutes so perfect for lunch!

Ingredients for Mushroom Bahji Recipe

  • 2 Onions (chopped)
  • 2 Cloves Garlic (crushed)
  • 1 tsp turmeric
  • 1 green chilli (adjust to taste)
  • 250g mushrooms (sliced)
  • Knob of butter (or ghee if you’ve got it)

Method for mushroom Bahji Recipe

  1. Heat the butter in a pan and saute the onions until soft
  2. Add everything else and cook on a medium heat for about 10 minutes stirring ocasionally
  3. Serve your mushroom bahji

We’re currently trying out the Atkins diet (which doesn’t really feel like a diet at all! The issue we have is that there are a list of allowed and not allowed foods so we’re having to be inventive with breakfast and lunch. Dinner, however, is no trouble at all. This Texas Red Chilli recipe ticks all the boxes with the Atkins diet. We’ve served this with some sour cream and turnip chips!

(serves 4)

Ingredients for Texas Red Chilli Recipe

  • 500g of Stewing steak (the cheapest you can find)
  • 2 tbsp olive oil
  • 1 x Onion (chopped)
  • 2 tbsp tomato puree
  • 4 fresh tomatos (chopped)
  • 1 Scotch Bonnet chilli Pepper (chopped)
  • 1 heap tbsp chilli powder (adjust this to taste)
  • 1 heap tbsp paprika
  • 1 heap tbsp oregano
  • 1 tsp cumin
  • 3 cloves of garlic (chopped)
  • 700ml water
  • Salt and Pepper (to taste)

Method for Texas Red Chilli Recipe

  1. Gently fry garlic and onions until the onions are soft
  2. Turn up the heat a little and add the meat until it’s turned brown.
  3. Add everything else except the water.
  4. When it’s all mixed up well slowly add the water.
  5. Turn down the heat and simmer for about 2 hours – keep and eye on the water and add more if required.

Be warned – this is HOT!
