Crickey oh Riley!! The sun’s out after months of bleak days. We’re finally getting a taster of summer. In the UK (certainly in our house) a bit of sun means that a BBQ is obligatory. We rushed up to Sainsbury’s and grabbed a bargain on some salmon steaks, whipped up some cheats tandoori chicken (cubed and marinated in preparation for the skewers) and grabbed a pile of burgers. Garlic & Rosemary Roast Lamb Recipe…

…with roasted vegetables and sweet potato

We had a sleepover last night with Kat, a good friend from our school days – a fitting excuse to share a good meal and a bottle of wine (or or more). We ended up putting this roast lamb recipe together mainly because we managed to get a 50% reduction on a half shoulder of lamb! I love this particular roast lamb recipe because it’s pretty easy to prepare and all the prep can be done before everything kicks off.

Butterflied Leg of Lamb Marinade
Actually, a little more than a marinate – this recipe will have you stuffing chunks of garlic into a butterflied leg of lamb, squeezing juice over it then marinating it for several hours for a delicious meal.
