Recipe: Pork Escalops With Mustard & Cream Sauce
Summary: A wonderfully hearty winter meal
Ingredients
- 2 tbsp Brandy
- 1 tbsp grainy mustard
- 125ml Cream or Soya Dream
- 125ml milk
- 100ml water
- 1 tbsp Cornflour
- 5 Pork Escalops (beaten with a steak hammer)
Instructions
- Cook the brandy on the hob for a couple of minutes
- Add the cream or Soya Dream and stir for a few minutes
- Add the mustard
- Add the milk
- Stir the cornflour into the water and add to the pan
- Bring to the boil and set aside
- Grill escalops on high for 7 mins each side (check pack instructions)
- Pour sauce over escalops
- serve with new potatoes and buttered garlic cabbage!

Here’s a great way to use up that Christmas turkey, you can use the fajita seasoning mix with beef or chicken if you prefer.
Ingredients for Fajita Mix
- 1 tbsp cornflour
- 1/2 tbsp chili powder
- 1/2 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp salt
- 1 tsp sugar
- 1/2 tsp crushed chicken bouillon cube
Mix the above together thoroughly and you have your fajita seasoning mix.
Ingredients for Turkey Fajita
- About 500g leftover turkey
- 1 red bell pepper (sliced)
- 1 onion (sliced)
- 1 tbsp oil
- Heat oil and fry turkey for about 3 or 4 minutes
- add onion and pepper and fry for a further 2 minutes
- stir in fajita seasoning mix and continue frying for about another 5 minutes
- serve with warm tortillas and salad
I’m by no means an expert on Greek food but I love the idea Greek meze – a fanfare of flavours and colours – the Greek meze is my idea of a real feast.
A couple of weeks ago I tried putting something together to approximate a Greek meze and it went really well (considering that I don’t really know what a real Greek meze should look like). Anyway this week my Mum’s coming down so I’m going to try doing something similar with a couple of extra’s. I’ve tried to keep it as simple as possible so please see below for Phill’s Greek Meze menu.
Shop Bought Greek Meze Ingredients
First the Shop Bought Ingredients, I know I could make these but this Greek meze needs to be simple because I want to spend time with my mum.
1. Houmous
2. Tzasiki
3. Pitta (large ones are better)
Simple Stuff
1. Chicken Drum Sticks in honey and soy sauce
(Pretty sure this isn’t actually green, but it works)
Mix 100ml soy sauce, 2 tblsp honey, a dash of lemon juice and a little oil. Coat the chicken drumsticks in the mixture (if you have the time marinate for 24hrs) and bake at 180°C for about 45 mins.
2. Fried Haloumi with lime
(This is definitely Greek!)
Slice Haloumi into 1cm strips, dust with flour and fry in olive oil until brown Golden Brown, turn carefully and repeat. Serve and squeeze lime over the top.
3. Olives with Oregano
Put the olives into a bowl, add some oliveoil, crushed garlic and oregano. Marinate if you have time and serve.
4. Garlic Mushrooms
Fry 2 cloves of crushed garlic, add mushrooms and salt then serve.
5. Fried Courgette
Slice lengthwise, dust in seasoned flour and fry each side until golden. Serve.
Slightly More Complex Stuff

Spicy Pizza Sauce
- 1 tube of tomato puree (200g)
- 5 Table spoons olive oil
- 3 or 4 garlic gloves (finely chopped)
- 1/2 tsp each of oregano and basil
- 2 tsp dried chilli flakes
- 2 tsp english mustard
- 1/2 tsp caster sugar
- 100ml water
Spicy Pizza Sauce Recipe Method
This is a bit of tough one, ready?
1. Chuck it all in and mix it all thoroughly
2. Leave it to stand for 2 or 3 hours to let the flavours get intimagte.
Job done! Enjoy your spicy pizza sauce!
| 175g (6 oz) tomato purée |
| 5 tablespoons extra virgin olive oil |
| 2 cloves garlic, minced |
| salt and freshly ground black pepper to taste |
| 1/2 tablespoon dried oregano |
| 1/2 tablespoon dried basil |
| 1/2 teaspoon dried rosemary, crushed |
| 300ml (10 fl oz) water |
Ok, the first thing to say is that this is not an authentic kofte kebab recipe. I had a pack of minced beef that was due to expire so put this dish together based on the wealth of information out there and a wing and a prayer! Interestingly it turned out really well!
Ingredients for beef kofte kebab
- 1lb (500g) Minced beef
- 1 egg
- 2 garlic cloves
- Zest and juice of 1 lemon
- 1 tsp turmeric
- 1tsp paprika
- 1 tsp cumin
- 1 thumb ginger (chopped very small)
Beef Kofte Kebab Recipe Method
- Mix everything up in a bowl
- Press the mixture around kebab skewers (see video below)
- Grill for about 15 minutes, turning occasionally
We served this with potato wedges and salad and sour cream in pitta.
