What to do With Leftover Roast Potatoes
One of the biggest oversights with leftovers is the humble roast potato. Whilst they taste phenomenal with the roast, cold roast potatoes lose their crispy appeal after a couple of days in the fridge. Here are a few idea’s that will help you use up those leftover roast potatoes.
Recipe: Pork Escalops With Mustard & Cream Sauce
Summary: A wonderfully hearty winter meal
Ingredients
- 2 tbsp Brandy
- 1 tbsp grainy mustard
- 125ml Cream or Soya Dream
- 125ml milk
- 100ml water
- 1 tbsp Cornflour
- 5 Pork Escalops (beaten with a steak hammer)
Instructions
- Cook the brandy on the hob for a couple of minutes
- Add the cream or Soya Dream and stir for a few minutes
- Add the mustard
- Add the milk
- Stir the cornflour into the water and add to the pan
- Bring to the boil and set aside
- Grill escalops on high for 7 mins each side (check pack instructions)
- Pour sauce over escalops
- serve with new potatoes and buttered garlic cabbage!

Bhakri Recipe (Indian Bread)
Bhakri is a round flat unleavened bread foudn mainly in western and central India. Unlike chiapati and other Indian bread recipes Bhakri is hard and is often used as a plate by farmers!
Nice and easy to make, this one is a great accompaniment to any Indian feast.
This is another great recipe. Must be prepared in advance (because of the marinade) but incredibly tasty and very impressive as a part of a buffet or as a main meal.
Recipe: Indian Whole Chicken
Summary: This Indian whole chicken recipe is an excellent alternative to your standard roast chicken. George, my 10 year old son, cooked this yesterday – pretty much all on his own. It tasted absolutely great and was a hit with the whole family.
Ingredients
- 1 x Whole Chicken (ours was about 1.5kg)
- 500g Natural Yogart
- 4 garlic cloves (finely chopped)
- 2 thumb sized chunks of fresh ginger (peeled and finely chopped)
- 2 tbsp fresh mint (chopped)
- 1/2 tsp turmeric
- 1 tbsp cumin seeds
- 1/2 tsp garam masala
- 2 tsp sugar
- salt & pepper (to taste)
Instructions
- Score the chicken flesh to allow the sauce to get right into the chicken.
- Put 350g of the yogart into a container with the rest of the ingredients and mix them all up
- Rub the yogart mixture into the chicken and marinade for as long as you can (24 hours is ideal, but not always practical)
- Put the chicken and sauce into a casserole dish, cover and cook at around 220C or Gas Mark 7) for 1.5 hrs – basting occasionally.
- Serve the Indian Whole chicken, add the remaining yogart to the pan and mix with all of the juices – serve this as sauce/ gravy
