Last night we were having some rather unappetizing frozen salmon steaks with new potatos and vegetables, we threw together a bit of sauce and it gave the meal another dimension (kinda high calorie though!).

  • 100g butter
  • 2 x egg yolks
  • half teaspoon of basil
  • 3 dessert spoons of lemon juice

Method:- Chuck it all in a pan over a low heat and stir until the butter melts and you have a lovely creamy sauce. Pour and serve.
