Zesty BBQ Chicken Kebabs with Marinade

Recipe: Zesty BBQ Chicken Kebabs with Marinade

Summary: These BBQ chicken kebabs carry an amazing citrus flavor that is very strong and works beautifully as a whole meal in itself. We served our Zesty BBQ Chicken Kebabs with cold Couscous and a watermelon salad.


  • Handful of fresh mint
  • Handful of fresh coriander
  • Zest and juice of 1 lemon
  • Zest and juice of 1 lime
  • 3 spring onions – chopped small
  • 3 Cloves of garlic – minced
  • 4 Tbsp natural or Greek yoghurt
  • Also: 1 kg chicken


  • Combine all of the Marinade ingredients
  • Chop the chicken into nice fat chunks, mix into the zesty chicken marinade and leave for at least an hour
  • Thread the chicken onto a skewer
  • BBQ for about 10mins or until done – turning regularly
  • Add humus, a bit of yogurt and chicken to pita and serve

We also chopped up and threaded some green peppers and regular onions on a skewer and BBQ’d these for 5 mins. This gave a nice crunch to the kebab.

    Sorry for late reply.

    Your kebabs were gorgeous. People were gathering like flies to try them out on Jubilee day and they weren’t dissapointed.

    Doing some more today (09/09/12) but will be adding watermelon salad with couscous and houmus.

    Thanks for supplying easy to make recipe. THEY’RE DELICIUOS!
