Skinny Spicy Cauliflower Soup Ingredients

  • 800 g Cauliflower, chopped (inc stalks)
  • 200g Celery, chopped
  • 4 cloves garlic, chopped
  • 2 medium onions, chopped (about 180g)
  • 2 tsp cumin seed
  • 1 tsp fennel seed
  • 0.5 tsp chilli flakes 
  • 2l Vegetable stock

Skinny Cauliflower Soup Method

  1. Heat your oil and add cumin and fennel seeds, cook until the cumin seeds start to turn brown (about 1 minute)
  2. Add onion, celery and garlic and cook until onion turns soft and translucent
  3. Add the rest of the ingredients and cook until cauliflower is soft (about 20 mins)
  4. Allow to cool then blend using a blender.
  5. Enjoy

Notes:-

  • I originally used 1 tsp chilli flakes but whilst the heat was nice it masked the cauliflower flavour.
  • You could add milk if you like and if you’re happy to drop the ‘Skinny’ add some cream!!
