Homity Pie Recipe

Before we start I have to put my hands up and say that this is not a traditionally accurate homity pie recipe. A true homity pie recipe would have wholemeal flour (which half of my kids don’t really like) and you would never find Le Roule cheese in a traditional homity pie, no sir…however, as with many of recipe’s we end up making, my homity pie recipe is a concoction of ingredients that I happen to have in the house at the time. Le roule and cream cheese found their way into the homity pie because I didn’t have much garlic and no creme fraiche at all! The important thing was that ended up with a great meal that all of the family actually ate.

For those that are interested the original homity pie recipe dates back to the 2nd World War where meat was scarce and everything else was rationed, it then underwent a rebirth thanks to the vegetarian restaurant Cranks in the 60’s. Homity pie is a traditional British, open-topped veggie pie mainly consisting of onion, leek and potato. I hope you enjoy my recipe!

Homity Pie Recipe Ingredients

  • 1 portion of short crust pastry

For the homity pie recipe filling:

  • 2 sweet potatoes
  • 50g butter
  • 1 large onion (diced)
  • 2 garlic cloves, chopped
  • 120g grated cheddar cheese
  • 1 leek, sliced
  • 7 Sprigs lemon thyme, chopped
  • 500g new potatoes, scrubbed and quartered
  • 50g Le Roule
  • 50g Cream Cheese

The topping for homity pie

  • A good handful of breadcrumbs
  • 2 tbsp Parmesan or hard cheese
  • A couple of sprigs of lemon and thyme

Method

  1. Roast the sweet potatoes on 200 for about 45mins or until soft
  2. boil the potatoes for about 25 minutes until cooked. Drain.
  3. while that’s going melt the butter in a frying pan and sauté the onion and garlic until soft and throw it in a mixing bowI
  4. Add the cheddar, Le Roule, cream cheese and leek, and give a damn good stir
  5. When the sweet potato is cooked, scoop it out of its skin, add it to the bowl and mash it in
  6. Finally add the potatoes and mix well
  7. Roll out your pastry to about 1cm thickness, line a flan dish and add the homity pie mixture
  8. top with breadcrumbs, Parmesan and thyme
  9. bake on 180 for 30mins or until golden
