I was looking for a quick and easy curry to take round to a friends house today and came across this rogan gosht recipe from a 1970’s cook book. Apart from needing some marinating time, this rogan gosht recipe is really easy and requires relatively few ingredients. According to Wikipedia, Rogan means oil and that is definitely evident in this rogan gosht recipe – initially I was shocked at the amount of ghee required (I substituted it with butter) but decided to go with the recipe and see what happened. I have to say that I was not disappointed, however, I wouldn’t recommend this particular rogan gosht recipe to anyone on a diet!

Ingredients for rogan gosht recipe

  • 450g Lamb
  • 1.5 tsp salt
  • 250ml natural yogart
  • 2 large onions
  • 250g block of butter (yes seriously!!)
  • 50g fresh ginger
  • 4 cloves of garlic
  • 125ml water
  • 1/2 tsp ground pepper
  • 2 tsp of paprika
  • 1 tsp ground cumin
  • 50g tomato puree

Method for rogan gosht recipe

  1. Dice the lamb (1 inch square), rub in the yogurt and salt and marinade for as long as you can – 24 hours is best
  2. Dice the onions, melt the butter in a large pan and fry the onions for around 10 minutes
  3. Blend the garlic, ginger and water together and add to the onion and butter, simmer for 10 minutes
  4. Add the rest of the spices and the tomato puree and simmer for a further 5 minutes
  5. Add the meat along with the marinade, stir and cook on a low heat for an hour and a half

And that’s it! This rogan gosht recipe really is one of the nicest that I’ve tasted – but I’m sure that has something to do with all the butter!! Enjoy 🙂
