Ingredients

  • 1 small onion (fine dice)
  • 250g mushrooms (sliced)
  • 1 cup arborio rice
  • 1/2 cup white wine
  • 2 cups stock
  • 2 cloves garlic (minced)
  • 1/4 tsp thyme, salt, pepper
  • 1 tbps nooch
  • 1 tbsp butter & some grated vegan cheese

Method

  • Add everything except the butter and cheese
  • Pressure cook for 5 minutes then natural release for 10 minutes
  • Stir in butter and cheese
