Ingredients
- 1 small onion (fine dice)
- 250g mushrooms (sliced)
- 1 cup arborio rice
- 1/2 cup white wine
- 2 cups stock
- 2 cloves garlic (minced)
- 1/4 tsp thyme, salt, pepper
- 1 tbps nooch
- 1 tbsp butter & some grated vegan cheese
Method
- Add everything except the butter and cheese
- Pressure cook for 5 minutes then natural release for 10 minutes
- Stir in butter and cheese
