Lebanese Fasolia Recipe

Lebanese Fasolia
Ingredients
- 2 x cans of kidney beans
- 2 onions (diced)
- 2 large garlic cloves (minced)
- 140g Tomato puree
- 10ml (desert spoon of salt)
- 1 tablespoon Lebanese 7 spice
- 6 tomatoes (diced) or a 400g tin of tomatoes
- Another 6 tomatoes (quartered)
- 600ml water
- 200g spinach
- Juice of 1/2 lemon
Method
- Saute onions until soft then stir in garlic
- Incorporate spices, salt, and tomatoes – cover and cook for about 5 minutes
- When tomatoes are soft add puree and stir for a minute or two
- Stir in kidney beans thoroughly, then add water and simmer for 15 minutes
- Add the quartered tomatoes and simmer for another 15 minutes
- Add spinach and cook or a further 5 minutes then add the lemon and serve
