Lebanese Fasolia

Ingredients

  • 2 x cans of kidney beans
  • 2 onions (diced)
  • 2 large garlic cloves (minced)
  • 140g Tomato puree
  • 10ml (desert spoon of salt)
  • 1 tablespoon Lebanese 7 spice
  • 6 tomatoes (diced) or a 400g tin of tomatoes
  • Another 6 tomatoes (quartered)
  • 600ml water
  • 200g spinach
  • Juice of 1/2 lemon

Method

  1. Saute onions until soft then stir in garlic
  2. Incorporate spices, salt, and tomatoes – cover and cook for about 5 minutes
  3. When tomatoes are soft add puree and stir for a minute or two
  4. Stir in kidney beans thoroughly, then add water and simmer for 15 minutes
  5. Add the quartered tomatoes and simmer for another 15 minutes
  6. Add spinach and cook or a further 5 minutes then add the lemon and serve
