Sauce
- 3 tbsp Soy Sauce (dark)
- 1 tbsp Rice wine
- 1 tbsp hoisin sauce
- 1.5 tsp sugar
- 1 tsp sesame oil
- 1 tsp sriracha
Base
- 3 garlic cloves (minced)
- 1 Onion (sliced into chunks)
- 1 Carrot (matchsticks)
- 1/2 red pepper
- 5 mushrooms (sliced)
- A good handful of cashew nuts
- 2 cups beansprouts
- 300g straight to wok noodles
- 2-4 spring onions (for garnish)
- Mix the sauce ingredients, give it a good stir
- Heat oil in a wok and fry in the following order
- Onion, garlic, mushrooms (about a minute)
- Carrot, pepper, cabbage (2 mins)
- Cashews, beansprouts, noodles and sauce (until the colour is consistent and the food is warm)
- Serve with chopped spring onions on top.
