Sauce

  • 3 tbsp Soy Sauce (dark)
  • 1 tbsp Rice wine
  • 1 tbsp hoisin sauce
  • 1.5 tsp sugar
  • 1 tsp sesame oil
  • 1 tsp sriracha

Base

  • 3 garlic cloves (minced)
  • 1 Onion (sliced into chunks)
  • 1 Carrot (matchsticks)
  • 1/2 red pepper
  • 5 mushrooms (sliced)
  • A good handful of cashew nuts
  • 2 cups beansprouts
  • 300g straight to wok noodles
  • 2-4 spring onions (for garnish)
  1. Mix the sauce ingredients, give it a good stir
  2. Heat oil in a wok and fry in the following order
    1. Onion, garlic, mushrooms (about a minute)
    2.  Carrot, pepper, cabbage (2 mins)
    3. Cashews, beansprouts, noodles and sauce (until the colour is consistent and the food is warm)
    4. Serve with chopped spring onions on top.
