I just bought a size 8 Potjie which is an 18.5 litre cast iron cauldron originating from the dutch and South Africa. Here’s my first recipe.
Ingredients
- 6 x tins tomatoes
- 1 cup red lentils
- 300g punnet of mushrooms
- 1kg carrots
- 1 pack celery
- 1.5 packs of small new potatoes
- 8 sprigs rosemary
- 5 bay leaves
- Salt
- 1.5 litres stock
- Red wine
- good glug of oil
