Until 2 weeks ago I didn’t know vegan crepes were possible. I stand corrected – I found this recipe from The Veg Space. Since trying this for the first time I haven’t bothered looking for other recipes and I have made almost no modifications because it’s pretty much spot on.
Ingredients
- 180 g plain flour
- 1 teaspoon baking powder
- 2 teaspoons sugar
- 400 ml soya milk
- 2 teaspoons vanilla extract
- 30 g vegan butter (melted)
- Combine and mix dry ingredients (flour, baking powder and sugar) in a mixing bowl
- Combine wet ingredients (milk, vanilla extract and half the melted butter) in a jug
- Pour the wet ingredients into the bowl and mix until you get a batter
- Heat a frying pan on medium-high (7 on our induction hob)
- Just under a ladel-full of batter is good for 1 pancake – cook side 1 until the top is dry
- Cook the second side for about 60 seconds or so.
