Serves 4
- 1 kg potatoes
- Gremolata:-
- 2 large garlic cloves
- 1 lemon (zest and juice)
- 1/4 cup fresh parsley
- 2 tbsp olive oilÂ
- Roast the potatoes
- Use a Microplane on the garlic and the lemon.
- Combine with lemon juice, finely chopped parsley, and olive oil
- When roasted, toss the potatoes in the gremolata and serve
