Serves 4

  • 1 kg potatoes
  • Gremolata:-
    • 2 large garlic cloves
    • 1 lemon (zest and juice)
    • 1/4 cup fresh parsley
    • 2 tbsp olive oil 
  1. Roast the potatoes
  2. Use a Microplane on the garlic and the lemon.
  3. Combine with lemon juice, finely chopped parsley, and olive oil
  4. When roasted, toss the potatoes in the gremolata and serve
