100 Calorie Omlette Recipe

100 calorie omlette…really? No, not really – I’ve managed to get it down to 101 calories but I’m happy with that! I’ve just signed up for a Tough Mudder event with Mandy, my wife, and a load of friends. This a 12 mile obstacle course that involves fire, ice, monkey bars, electric shocks and more hair raising self-abuse than you can shake a stick at!
Because of this I need to lose about 1.5 stone fast. the 100 calorie omlette recipe is nutritious, filling and low in calories so a perfect start to my day and to my training regime.
100 Calorie Omlette Ingredients
- 3 egg whites
- 20g kale leaves (discard the stalks – they’re bitter)
- 3 cherry tomato’s (chopped)
- Half an onion (diced)
- 1 garlic clove (chopped)
- 1 tsp mixed herbs
- Dash of lemon juice
- salt & pepper
Method
- Spray the pan with 1 calorie cooking oil
- Saute the onion and garlic until soft
- Add the herbs, lemon, tomato and kale and cook for about 5 minutes
- Pour over the egg whites and cook on a low heat for about 4 minutes
- Put pan under a hot grill until the egg is completely set
- Serve
