Vegan Sourdough Crumpets

Makes 4 crumpets

Fresh, fluffy crumpets to die for! Until now I have never tried making crumpets. Turns out they are incredibly easy!!

I didn’t have egg moulds (I have now ordered them!) so I used cookie cutters. Just make sure to grease them well – if they stick you can use a teaspoon to release them. The trick to this, I feel, is the temperature. You need it to be warm enough to cook the crumpet through yet not so hot that it’s going to burn the underside before the top is dry. It’s not the end of the world if the top is still wet, it’s just that you don’t get the full array of crumpet holes (and everyone knows it’s the holes that create the flavour!)

Ingredients for vegan sourdough crumpets

  • 1 cup/ 240ml sourdough starter
  • 1 tsp sugar
  • 1/4 to 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Method

  1. Whisk everything together for a couple of minutes
  2. lightly oil a pan
  3. Grease your egg ring and place it in the pan
  4. Add around 1/4 inch of crumpet mixture
  5. Cook on a low flame/ setting until the top is nearly dry
  6. Remove from egg ring and cook on the top for a couple of minutes
